Well, I really started to see H/G as a possibility after reading OOTP, so I honestly don't feel that it happened out of thin air. I liked Ginny, the way her character developed, and the way she interacted with Harry; they seemed compatible to me. As for build up, it was fairly satisfactory. Could there have been more? Sure. Could it have been better handled? Sure. I enjoyed H/G in the books, though I am not all claiming that it was done perfectly. A few things could have been done differently- a little more interaction would have been nice, maybe slow things down a bit, a little more development, etc. But then, I'm not a professional writer, so what do I know?

My story's pretty much the opposite. From SS to GOF, I thought Ginny's crush was cute, but that nothing would ever really come of it. My only ship then was H/Hr, though I was pretty open to R/Hr. That changed when Ginny came out of her shell (around Harry) and got over her crush in OOTP; I thought there was a chance that their friendship could deepen and eventually grow into love, and that they could be quite good together. OBHWF began to grow on me (yes, I love cheese). After HBP, I generally enjoyed the H/G, but got turned off of R/Hr (must have been the canaries)
Well, I went back and re-read the books, looked at different sites, essays, etc, and got back into H/Hr, gaining a new appreciation for it

, and became interested in other "fanon" ships.
